- 1 teaspoon cinnamon
- 1/8 tsp salt
- 2 tbsp cold unsalted butter
- 24 g all-purpose flour
Glaze
- 30 g powdered sugar
- 7–10 ml milk
Prepare the Muffin BatterIn a large bowl, whisk together 190g self-rising flour, 65g granulated sugar, and 1 teaspoon ground cinnamon.In a separate bowl, melt 75g butter and let it cool slightly.Add 1 large egg, 120ml milk, and 1 teaspoon vanilla extract to the melted butter. Whisk until smooth.Gradually pour the wet mixture into the dry ingredients, stirring gently until just combined. Avoid overmixing. Make the Crumble ToppingIn a small bowl, mix 50g light brown sugar, 1 teaspoon cinnamon, a pinch of salt, and 24g all-purpose flour.Cut in 28g cold unsalted butter using a fork or your fingers until the mixture forms coarse crumbs. Assemble the MuffinsFill each muffin cup two-thirds full with the batter.Sprinkle the crumble topping evenly over each muffin, pressing lightly so it sticks.
